About Optimbulles

Located in the rolling hills of Borgloon, Optimbulles is a family-run winery where balance is everything. What started in 1991 as a passion project by three friends—including Guido Geunis, who brought knowledge from his family in Champagne—has evolved under the leadership of the second generation, Maxim Geunis, into a beacon of natural and regenerative viticulture.

We believe that great wine begins with a living soil. That is why we have never used herbicides or insecticides, favoring a holistic approach that actively restores nature.

Our commitment to biodiversity is visible in our pioneering work with vitiforestry. Since 2021, we have integrated fruit and nut trees among our Pinot Noir, Chardonnay, and Pinot Meunier vines to create a natural microclimate. Between the rows, our flock of sheep acts as nature’s workforce. By grazing the cover crops, they replace heavy machinery, naturally fertilizing the soil and improving its structure without compaction.

The result is a resilient ecosystem and honest, Brut Nature sparkling and still wines (and even ciders!) that are unfiltered, unchaptalized, and purely reflective of their terroir.
